Nice bake, William! Do you have a go-to recipe(s)? It took me some getting used to (process, figuring out how the dough changes, dought and baking temps) - but I agree, we have not bought more than half a dozen loaves of store bread in the last 4 years.

Unfortunately 'organic' is one of those terms that has been destroyed by government regulation.  The usda is corrupt and the certified organic sticker is basically a cool sticker that rich major food producers can purchase from the government to justify charging higher prices. Organic is supposed to mean grown naturally without pesticides, especially synthetic pesticides(no roundup).  However the usda makes exceptions for certain foods and companies to allow said pesticides to still be labelled organic.   Much like 'grass fed' beef can just mean the cows were fed grass for the last 2 weeks of their life.  Some organic food is grown with pesticides then before harvesting they stop spraying pesticides and call it organic. Another reason we need better laws to keep corporate interests out of government.

so when I feed my starter to make my dough the next day, I will use 50% ap flour and 50% wheat flour.  I need 80 grams of starter for my dough the next day.  for the dough I use the 80 grams starter, 600 grams of water (75% hydration), 16grams of salt (2% salt), 750 grams of bread flour and 50 grams of rye flour.  After fold+stretch and proofing, I will split this to make 2 loaves.  If I dont give away one of the loaves, I freeze it for convenient eating later.
