Ingredients Chicken Marinade 1½ lbs boneless skinless chicken thighs, cut into chunks ½ cup plain full-fat yogurt 1 tbsp lemon juice 1 tsp garam masala 1 tsp chili powder ½ tsp turmeric 1 tsp salt Sauce 2 tbsp oil or ghee 2 bay leaves 2 green cardamom pods 1 tsp cumin seeds 1 red onion, finely chopped 4 garlic cloves, minced 1 tbsp ginger paste or fresh grated ginger 3 tbsp tomato paste ¼ cup water 1 tsp sugar ½ cup heavy cream 2 tbsp butter 1 tsp curry powder or more garam masala Optional: Fresh cilantro Kasuri methi (dried fenugreek leaves) — very authentic flavor if you can find it. (It’s a little difficult in some places but a lot of Targets and Whole Foods do sell it; I don’t think it’s optional-along with the cardamom, it’s what gives the dish its signature “pop.”)

Instructions 1\. Marinate the Chicken Mix: yogurt lemon juice garam masala chili powder (2 tsp paprika and ¼ tsp cayenne) turmeric salt Add chicken and coat well. Let sit: The original recipe says 5–10 minutes minimum but I suggest at least an hour but overnight if possible for deeper flavor ⸻ 2\. Cook the Chicken If You HAVE an Air Fryer Cook at: 400°F about 12 minutes flip halfway If You DO NOT Have an Air Fryer Option A — Oven (Best Alternative) Preheat oven to 450°F Spread chicken on a lined baking sheet Bake 15–18 minutes Broil 2–3 minutes at the end for charred edges Option B — Skillet Heat a little oil in a pan Cook chicken over medium-high heat Let pieces brown before stirring too much Cook about 8–10 minutes Option C — Grill Excellent smoky flavor: Medium-high heat 4–5 minutes per side ⸻ 3\. Make the Sauce Heat oil or ghee. Add: bay leaves cardamom cumin seeds Cook 30–60 seconds until fragrant. Add: onion garlic ginger Cook until golden and softened. Stir in: tomato paste curry powder/garam masala sugar water Simmer 5 minutes. Optional but recommended: Blend the sauce smooth with a blender. (You don’t want a chunky sauce: That’s one of the secrets to restaurant-style butter chicken.) Then return to heat and stir in: cream butter Add cooked chicken and simmer 5 more minutes. Finish with: cilantro crushed kasuri methi if using

Easy Homemade Naan (No Tandoor Needed) Ingredients 2 cups flour ¾ cup warm water 2 tbsp yogurt 1 tsp sugar 1 tsp salt 1 tsp instant yeast 2 tbsp olive oil or melted butter Optional: garlic cilantro butter for brushing ⸻ Instructions 1\. Make Dough Mix everything until a soft dough forms. Knead: 5–7 minutes Cover and let rise: 1 hour ⸻ 2\. Divide & Roll Cut into 6 pieces. Roll into oval or teardrop shapes. ⸻ 3\. Cook in a Skillet Use a very hot cast iron or nonstick skillet. Cook: 1–2 minutes first side flip when bubbles appear You can press lightly for better browning. Brush with: melted butter garlic butter Optional: Sprinkle cilantro. ⸻ Easy Garlic Butter for the Naan Mix: 3 tbsp melted butter 1 grated garlic clove pinch salt Brush on hot naan immediately. ⸻ Best Pairings Serve with: basmati rice naan cucumber yogurt sauce pickled onions
