Apologies for the late reply. I got tired of baking bricks (overproofed, underproofed 😖) with the open bake loaf. Finally tried a recent technique using the two loaf pans (https://stretchandfolds.com/sourdough-bread-in-a-loaf-pan-two-pan-method/ -or- https://amybakesbread.com/how-to-bake-sourdough-in-a-loaf-pan/) and skipping the frig retarding step. Much more consistent results now!

Salivating rn. Great job, looks delicious, thank you for the info. I make my own too when I have tge time, but it was quite a learning curve in the beginning. Seeing this picture,I gotta get my ass baking again!!
