This is actually something my grandma taught me it works for anything you can or jar not just meat. When I make salsa, or sauces that I jar for long durations I always put a thin layer of olive oil on top. The oil floats so it stays on top, olive oil doesn't change the flavor, and it creates a perfect seal making the product last much longer in storage. great post!
