I have to ask: Why does this sound like a complaint? The whole point of growing your own stuff is to have stuff that you know is good. It's not to have something cheap. And the post was about making people healthier; which is a tall order to be sure. Without the ubiquitous controlled atmosphere and refrigerated storage and shipping of the modern day it would indeed be cheaper to grow your own. It would just cost a hell of a lot more to "just go buy it". I've got to say, if I lived in Arizona, judging from the time I spent there, I wouldn't even try for the most part. Or I'd concentrate on finding what will actually prosper there and just going and buying what does not.

You cannot change a people's behavior without a reason for them to WANT to change, such changes can only come from positive incentives that outweigh the cost of doing nothing. When welfare was at it's most generous under Jimmy Carter, women started factoring out children by the half dozen. No, these mothers really didn't want the children, but it was better to have them, than to be childless as thus women's behavior changed. Subsequently as women believe it is better to be childless than to have even a single child, you get the dangerous statistic that cites by 2030 50% of women under 30 will be childless. Did the culture change the women? No, the lack of incentive to HAVE children leads them to not having them, even if they want them. I suggested many moons ago that women under 25 should be completely exempt from income and sales tax if SHE has children during those years 18-25 with a exception probably to 30. This gives the mother far more wiggle room to focus on their children's most crucial early years without being burdened by bills. This would be extended to fathers whose residency is shared with the mother.
